Pork Chop with Enchilada Sauce
I've made this enough times that by now it holds a special place in my food history. If I made a small list of things that made me happy in life, this would be on that list. It's my mom's sauce, obviously not as good and the taste is basically as close as I could get from sheer memory. But there is something to cold cheese hitting that hot sauce mixed with a large bite of a spicy pork chop, cool lettuce tomato and raw sweet onions that really has unique magic punch.
I pan grilled some apple slices the night before in butter and added the leftovers in my cereal this morning.
