I'll Be Here in the Morning

Chicken Sausage, Kale  & Peppers
The day before I woke up with the muthah of all migraines.  I get them really bad. I have a handle on most of my food triggers so I avoid many at this point but sometimes the stars line up and they just come.  There was a very intense thunder & lightning rain storm that night.  The air pressure has an impact. My mother went into the hospital the night before also.  She's 95 so it's never an easy process.  There was stress of not knowing what to do and lots of worry.  Even though I'm not near her, I know that she'll be prodded and poked.  She's always really cold and the hospitals are freezing.  The waiting time is ridiculous.  I get so worried for her even though I know she is in great hands.

As soon as I opened my eyes that morning I knew it would be full blown.  Usually I try to ignore it at first  because once in a great while you can trick yourself.  Like tiptoeing past a sleeping grizzly.  Just make as if all is well and quickly go drink some coffee and try to get something in your stomach before downing an Aleve.  But that bear woke up, angry.
Violent vomiting and pounding pressure, the light sensitivity and inability to function leaves me so weak. You have to shut down and let it pass, and pray there won't be too many staggering trips to the bathroom. But there was.  The next day however, I was so grateful to be among the living, able to function and understand my mom's ability to fight through so many health issues.  I perked up quite a bit.
Vegetable stir fry with chicken sausage over black rice.

Went to visit my feral cats of Red Hook and witness the last of the blooming trees.

Shake it Don't Break It

Mock Shake & Bake Chicken Thighs
over sauteed purple cabbage, accordion potatoes.
I sort of miss the days that these types of time saving products were so mysterious.  Hamburger Helper.  What a dream.  How does it work?  No one knew.  Magic.  But now we've crossed over.   We know that Shake 'N Bake is nothing other than flour, breadcrumbs and spices. So why not make yourself and do without the unnatural ingredients you don't need.  Plus you can reduce the salt.
I like Panko crumbs, paprika, little cayenne, garlic and onion powder, black pepper, dried crushed parsley or oregano, bit of flour.  Put in a bag, shake it and bake it.  Don't break it or it'll be all over your floor.

I Got Got Got Got No Time

Rinse pan and repeat.  This time the dump casserole is chicken, quinoa, black olives, chick peas, artichoke hearts and lots of garlic & lemon.

One More Cup of Coffee Before I Go

Got out of the city

I think this is Nimham Mountain State Park.
This is Avocados, a strange Mexican Food Restaurant.
Everything looked right but the flavors were off just enough where you couldn't tell if you hated it or it was fine.  I ate my whole plate of enchiladas and one of the hot sauces was incredible.
Some places are just sad inside.  I hate to say it be this place gave me such a bad vibe.  But they had a really cool looking bar inside that no one was in.

The nearby Drive In was amazing though

The Overlook Drive-In near Poughkeepsie
A good burger, although you couldn't tell by this photo

Deep fried mozzarella sticks
Stayed for Logan.  Loved it. Would have bet you $50 that would not be true.

Thank you!  So nice to get out.
And then come back in before everyone has flooded in.
