Everyday Love Me Your Own Special Way

Braised & Glazed Honey Chicken 
Have you realized many recipes appeal to you based on the title?  Just like clever album covers in the bin, I'm calling this Braised and Glazed Honey Chicken to get a notice.  It's certainly worth the little effort it takes to make and the reward is a tangy, spicy tender chicken that wakes up your senses.

In a Dutch oven, simply brown seasoned chicken legs on all sides before adding lemon, honey, Asian garlic sauce, lots of garlic, soy and Hoisin sauce and just enough chicken stock to come half way up the chicken. Stir very well.  Cover and put in oven on 375 for 40 minutes.  I served it over a mushroom wild rice and sauteed cabbage. 
This will reward your taste buds in spades and like a barbecue sauce, can grow and change up as needed.  Add a little tomato paste or chili flakes. Sesame oil is also nice. Ginger is very welcome.  You can do this in the slow cooker. You can marinate overnight if you have the time.  Once I put in two cans of Cannellini beans along with all the rest and they came out tasting exactly like the best baked beans.  This time I added potatoes.

She did the Mash

Black Bean Turkey Veggie Burgers


These baked bean burgers have a can of drained *mashed up black beans, ground turkey, bread crumbs, one egg, yellow and green peppers, onions, parsley, garlic and lots of cumin, chili powder and black pepper.  425 for about 20 minutes and a slice of cheese to melt on top at the end.  Oven burgers are convenient for lunch box meals because you can make a quantity at once.  
More tooling around the neighborhood for interesting Halloween decorations.  I love people that put in the effort.   If I could paste a 'like' somewhere I would.

Not Halloween but Spike Lee's wall at 40 Acres and a Mule production company features a mural of those that have passed and a gorgeous mosaic of Spike under the Wake Up bell.

*the best way is to squoosh the beans with your clean hands between your fingers until they turn into a paste.  It's very Halloween-y.

Getting So Much Better All the Time

Sheet Pan Burgers and Roasted Vegetables

Bananas are greener than ever before this year. Have you noticed?
Eggs Rancheros in a tomatoe-y Kielbasa sauce for breakfast 
Sauteed onions and peppers in a light, spiced tomato sauce with chopped Kielbasa sausage is a perfect bed for poached eggs.  This may have been my dad's Midwest Mexican invention.  He made it with summer sausage sometimes.

Later, another Sheet Pan burger meal with added roasted spicy Chick Peas. Turmeric, Cumin, Onion powder and salt and pepper roasted at 425 degrees until crispy transform these mushy peas into nutty bites.  You can go longer and make them into a crunchy snack. 
Like I mentioned before, I found it so surprising that Ina Garten talks about how she isn't confident in her cooking.  That she perfected recipes and follows them to a tee, and doesn't deviate.  I'm not sure if I've ever made anything the same twice.  I should be getting better, but its not been a linear process.  I too am not confident, yet love the uncertainty of creating.
