My Endless Love (with potatoes)
After we've had some decadent food and want to sort of cool it and eat healthier, one thing that's good to make are these ground chicken apple soy burgers. They taste clean is the way I'd describe them. The meat is good but has no fat. The diced green apple, red onion with garlic and ginger, soy sauce and about 2 tablespoons of Panko crumbs to bind really play nicely together. Okay, I did put cheese but you can't expect to go cold turkey.
And an exciting new discovery as well as an addition to my already in progress fascination with potatoes was this sliced baked crispy potato. I'd seen one in a magazine awhile back but didn't read the recipe. How hard could it be right? Thought I'd try it on my own.
It's easier and faster than you'd imagine to slice up. I just fanned them out while cupping in pieces of garlic and olive oil, salt and pepper. I added a little margarine but its not needed. Baked them on my pizza stone on 350 for about 45 minutes until the edges got crispy. Damn good! And easy and cheap just like it should be. Next time I can see adding red pepper flakes, rosemary, vinegar, cajun seasoning...the list is endless.
