Rainy Days and Mondays
Sometimes your meal is just as drab as your day. Sometimes you just gotta get through these heavy days of the week, like Monday. However, sometimes your day gets a little better because of your meal.
That's what happened with this quick tuna and noodle casserole made with just cream of mushroom soup, frozen peas, corn and carrots, a little milk, some leftover Columbian cheese and nutmeg. I used that little Orecchiette pasta and somehow it was richer tasting. Just a little Parmessan-Panko-cracker crust. Baked until bubbly and slightly brown on the top.
This was not supposed to be special. But it was.
