You know at first I was a little embarrassed to write about this dish but now looking back, it was full of flavor and I'd think of it like an ugly dog. You got the love you needed out of it but it just wasn't that cool to look at.
Sometimes at the end of the week you have odds and ends that you don't want to waste that are perfect for this type of dish. A mash-up of stir fried rice and chilaquiles. I had leftover Spanish rice, mushrooms, onions, green bell peppers and soft corn tortilla pieces. I put it all in a hot wok with some egg and good intentions. Soy sauce and red hot chili oil finish it off.
