I'm Doin' Fine, On Cloud Nine
Saturday morning and the day hasn't pooped on us yet. Its quiet, calm and the breeze is light. We are enjoying coffee in bed and the freedom of a day off. Even breakfast takes on new vigor with the fresh herbs in town. This morning I made a rejuvenating sauce for our regular poached eggs. I took some of my left over pesto, added yogurt and fresh dill. It was light and cool, refreshing and bright.
I topped the eggs with chopped turkey bacon and served over toasted breakfast thins.
