Black Bean Burger over Sauteed Red Cabbage Slaw
Smashed up black beans, oatmeal, egg, onion, red apple, cumin and chili. The great thing about black beans is they actually cook up with a meat like consistency and even let you get that slight char on your burger.
Red cabbage with balsamic vinegar sauteed up quite nicely but with added apple, carrot and red onion - it transformed a slaw into a gorgeous warm bed for the burger.
Eggs, turkey bacon and no big shakes here other than I am getting better at making potatoes, thin and crunchy but not fried in a slew of oil.
