The Record Shows, I Took The Blows

Sheet Pan Shrimp Boil
I love the idea of a shrimp boil but thought a sheet pan version would better serve two people.  All the usual suspects, corn, potatoes, sausage, shrimp, and lemon dredged in Old Bay Seasoning, salt and pepper.  Calories were cut by using chicken sausage and I saved time by using frozen corn. 
I served this over creamy Polenta.  





The leftovers made excellent lunch box meals.  
Is it possible to come up with a genuinely new food idea?  I figured someone had already thought of a sheet pan version of Shrimp boil and yep, a quick search produced a long list of tried and true recipes.  I will say, my addition of roasted, lemony tomatoes provide a kick of acidity lacking in the traditional ingredient list, in my humble opinion.
