You Can Go Your Own Way

Sometimes the world acts like a spoiled child and that's when you need nachos for dinner.  Its very easy to over-eat the traditional chips and cheese so this is a good compromise in alternatives. Potato medallions baked to a crisp and then topped with chorizo and just enough cheddar to make the visual satisfying. 
The real star is the 'salsa' that you pile on top.  Load up on this part.  Chick peas, jalapenos, cucumbers, tomato, mint, parsley, dill, red onion, lemon and lots of salt and pepper.  Put together then let them set on the counter to merge the flavors.
