Zucchini Ribbons with Pesto
This was great.  A nice pesto sauce mixed with a little yogurt and Parmesan.  You could easily replace the sausage with walnuts and it would be equally fabulous.
What I like about this meal is that together the bite is wonderful but you do taste all the distinct flavors separately as well.  Basil, garlic, Parmesan, zucchini, sausage, garlic, nuts. Plus you get the aroma and the vibrant green color. 
Zucchini ribbons are super easy to do with the potato peeler.  Just lay it down on the counter and shave it down away from you from front to back until it becomes thin.  Flip it over and do the other side, then the sides until you have nothing left.  I save the bits and pieces to throw in eggs the next morning. Nothing goes to waste.
