Sauteed Red Cabbage and Baby Spinach

Why didn't I think to saute red cabbage before?  It's so puuuurdy and tasty and even a little sweet especially with red onions alongside and some baby spinach thrown in for a splash of color.  Breaking the soft yolks from the poached eggs over top is heavenly especially when scooped up with a bite of crispy turkey bacon.
This would be great as a dinner side and a little balsamic vinegar brightens the flavors.
