Yeah She Looks So Right, She is All I Need Tonight

Once in awhile I make something that I wish so much that I could share with my fellow foodies right at that moment.  The ones that would taste it and go 'yeah, yes!'  This cool cucumber soup was one of those times.  When I tasted this soup I thought....this is who I am!  Or this is who I wish I was, or this is how I want to be thought of or seen.  A cool, creamy, light, non-fattening, vibrant, outrageously tasty bowl of YES!
I'm partial to green food anyway as in the color.  It makes my heart sing.  I love my stews and chunky soups but this, this soup is just pure joy.  On a warm day, you pull this chilled soup out for someone you love and that is church right there.  You can tell the whole wide world to shove it!

Ingredients
U.S.MetricConversion chart
  • 2 cup(s) plain soy yogurt
  • 1 1/2 cup(s) Japanese or young English cucumbers, peeled, seeded, and chopped
  • 2 tablespoon(s) fresh lemon juice
  • 4 tablespoon(s) fresh mint leaves, chopped
  • Salt to taste
  • 2 teaspoon(s) ground cumin
  • Small petals from the center of a rose, for garnish

Directions
  1. Place all ingredients except garnish in a blender. Puree until smooth. Season with salt. Ladle into serving bowls. Garnish with rose petals
Yeah, rose petals....that ain't happening but instead I blended in a large just-ripe avocado for extree smoothness.  And extree smooth it was to be.  I'd highly recommend it.
So good, so right.  I wanted to shout it!   Hey, I think this might be the summer of cool soups!
