Similar to Sheet Pan Dinners, is my new favorite, Roasting Pan Dinners. The deeper vessel allows you to layer ingredients in order to cook at different times more easily. To save time I did par-boil the potatoes before placing them on the bottom with sweet onions and on the stove top, browned them up slightly before crumbling spicy Italian sausage on top and sliding the pan into a 425 degree oven for 20 minutes. Then I added massaged oiled kale for about 10 minutes and finally spiced shrimp for the last 5 minutes until they were pink. A big stir in the roasting pan and dinner is served! You can drizzle with olive oil and add a splash of Balsamic Vinegar or even a dusting of Parmesan Cheese. Delicious!
These are all some of my favorite things, and the sausage compliments the shrimp like the kale does the potatoes. It's also perfect for a lunch box meal.
