If You Wanna Lose Your Blues, Go Put on Your Easing Shoes

Easing back into better food I made these simple avocado toast stacks with poached egg and tomato. Good whole grain toast with olive oil is even more special when your taste buds need a welcome back hug from the universe. When they are dipping their toes in the culinary waters again. Eggs too, are great starter foods.  They have richness, creaminess and can be lightly seasoned to go easy on the gut.  
Tomatoes need a little coaxing in the winter months with salt and lemon juice to bring out their fruitiness.
