And It's Getting More and More Absurd

Fresh and Zesty Spaghetti Squash
This was insanely bright!  Spring in a bowl, just in time for the oncoming winter months.  You get the warm roasted flavors of the spaghetti squash but topped with real tomatoes (and 1 can of diced), fresh oregano, bell peppers, mushrooms, zucchini, garlic, onion and lots of Parmesan cheese.  Get the real stuff and grate it, so much better.  This can be completely vegan or like I did here, brown up some Pancetta bits to flavor the sauce for that extra level of deliciousness.  So great! 






Again, I was able to take the rest of this dish to work as P ignored the cute glass jarred leftover packaging I created that was in the refrigerator.  Easy to just pour out into a sauce pan and reheat.  A caveman could do it!  Still nothing.
So not only does he not eat leftovers, but he forgets to eat entirely if he's working!  This is yet another non-comprehensible affliction that leaves me with that face that my cat makes when she smells something fowl.  My sister and I joke about living with seniors because both our mates are prone to gas fires, meaning pots left on burners, gas left on, front doors left open, all kinds of dangerous situations that would make sense if they were say, 95.   
Power Balls 
A gal needs to get creative.  So to combat this fool from dying from malnutrition,  I made these Power Balls I'm calling them.  Baked oatmeal, nut butter, flax seeds, nuts, and that's it.  You really need to put muscle into this.  Put the pre-ball mix in the refrigerator for about 15 minutes so you'll be able to form them into balls much easier, adding a little Almond milk to help them bind.  I put them in the oven them for about 10 minutes to toast the oatmeal.  Normal people would add honey, raisins, chocolate chips, but see P doesn't allow any sugar.  Because even though he can drink 20 plus beers without blinking an eye, he believes in his Neanderthal brain that a raisin is going to kill him.
