You can barely see it under there but I promise you, it's a baked sweet potato. The one reason I share this as a dinner idea is because it's always so surprising just how incredible any roasted vegetables taste together especially if you have a green with something tangy like tomato. Chick peas roasted I can never say enough about because talk about transformation. A little cheddar cheese and yogurt and this super cheap beauty is done!
