Remember I was saying how great that Pueblo Green Chile sauce was over just about anything? These poached eggs set over top of that simmering sauce and soft buttered polenta was right as rain with just a bit of pepper jack cheese melted around the edges. Imagine if a pillowy down filled bed was edible, like in Willy Wonka or something - that would be this breakfast. A cream dream.
