You Get What You Need

Sometimes you realize you don't have much to work with to make a full meal after work.  But sometimes those couple of vegetables you have laying around are enough to make it happen.  Like this quickie dinner with jerk seasonings on skinless chicken thighs, tomatoes, onions and garlic roasted in my cast iron skillet. I didn't even bother to sear the chicken beforehand.  Delicious and simple. Eazy peazy.
