What Have I Ever Done To Deserve Even One of the Pleasures I've Known

I love after a holiday you might find a great deal on a big piece of dinosaur sized meat! They had these fresh ham shoulders for a steal at Pathmark. Kinda weird choice since we had just finished off a large roasted spiral ham at Christmas but I figured we could make it different.

I had such great results with Nigella Lawson's Aromatic Slow Roasted Pork recipe (www.foodnetwork.com/recipes/nigella-lawson/slow-roasted-aromatic-shoulder-of-pork-recipe/) awhile back that I tweaked it for this fresh ham. I seasoned it with pepper flakes, dried herbs, soaked it with tangerine, orange juice and soy sauce, poked it all over with garlic cloves, put stock in the bottom of the roasting pan and let it slow roast for about 12 hours on 275.

Perfect crackling!
And the meat, the meat was so juicy and tender, it just fell apart like pulled pork but it had a little more chutzpah.

I made this overnight so we woke up to the alluring smell of roasted beast. I had to use some for breakfast, so I steamed a bunch of flour torts, poached eggs on top of the meat fried up with some onions and roasted tangerine slices.

And a big chunk of cracklin' on top!

I know I don't deserve this. But I sure am grateful!

Just nod if you can hear me. Is there anyone at home?
