It Caught on in a Flash

She did the mash!
You've seen the eggs baked in tomato sauce recipes floating around for years.  This is a take off of that and another one of my mash ups, a mock chilaquiles slash eggs baked in ranchero sauce.  This was a winner because it all gets a crust type thing going on in the bottom with the blue corn chips and cheese.  I can't say enough about what egg yolks do for a dish.  Like nature's cream sauce.  

I keep waiting to document fall but the transition has been so very subtle that you only see proof in tiny glimpses.
