Dark looming clouds, a big rainstorm approaching....this is my idea of a great day!
Harsh weather is always welcome in my world, as long as it doesn't kill me.... or others.
A very veggie meatloaf.....uh (said quickly).... topped with turkey bacon. I'm sort of getting this whole ground meat/veggie mixing thing down, building more and more pairings. Why not throw in some flax seed and oatmeal? Beans, corns, carrots, zucchini, peppers, herbs. Whatever you have, you almost can't screw it up.
And then anything baked is just warm happiness. Steamed salted green bean side.
The sauce was basically a can of Hunt's tomato paste mixed with a couple of spoons of chipotle sauce spread over top.
