Mona Lisas and Mad Hatters
Saturday we awoke with sore knees and various aching body parts. Winter's taken its toll on all the elements this year. Cold and windy. We could have gone to get hot breakfast skillets at Pequena but did I mention it was cold and windy?
My firm but unfortunately flat ass was going nowhere. Wait, we had potatoes, onions, eggs, cheese. I have a cast iron skillet. I had the means to make these skillets we were craving. I par-boiled the diced red potatoes, sauteed up some green bell pepper, onion and added leftover brocolli. Fried up and crumbled a little turkey bacon. Put everything together in the skillet before adding scrambled seasoned eggs. I let that set just a few minutes before I popped it in the oven to finish.
Breakfast is not brain surgery but it does take a certain kinda crazy to perform it. I have a kitchen that is about 2 foot by 2 foot, so there is no room to move and no room for mistakes. I have to be a contortionist sometimes to be able to get stuff out of the fridge and make in the pan. With eggs, everything has to happen so fast in order to get them just right, not burnt, not stick and fluffy. It takes crazy, I got your crazy.
Breakfast skillet at home. Who cares what its doing outside or if its dark outside or light.
