Give the People What They Want

Ground Pork Stuffed Bell Peppers. Bell peppers on sale, a giant bag. I figured why not do stuffed peppers. To be honest though, I was really craving meat, like a big giant burger.
So instead of loading these up with lots of veggies, instead I filled with mostly ground pork, peppers, onions, garlic and spices.
I also took tomatoes and chopped them up for some tang. I always use the pulp of the vine ripe tomatoes because there is a lot of flavor in the seeds and the pork meat can use the moisture. Topped with some Panko crumbs and EVOO. In the oven for 30-45 minutes.
These would be nice served over a nice bed or rice or barley or couscous but this night, I really just wanted the basic meat and vegetable.
Isn't that interesting actually. You'd think hunger is hunger but no, sometimes us girls wake up and want a huge plate of pasta and sauce. No meat needs enter the picture at all. Other days you might feel a big steak on a plate would be just fine because the meat craving is huge. And still other times you feel your body really craves a more balanced offering of starches, veggies and meats. Our body needs certain things like iron or other nutrients and its smart enough to get the word out and up to our little pea brains to let us know what to choose that day. Pretty incredible when you think about it.
