Pigs in Zen

I got these great boneless pork chops on special. I love pork but feel void of bones and fat it usually needs a bit of a kick. I heavily spiced them all up with a dry rub and pan seared them before allowing them to cook through in the oven with a little orange juice.
After they rested, I cut in thin strips to serve as fajita meat!
Canned beans and packaged Spanish rice were quick sides. I dressed the beans with a big dollop of Greek yogurt and a handful of pickled jalapenos. I had green bell peppers and onion as well as tomatoes and torts.
A great Sunday night supper.
