Chicken Stir Fry with Carrot Ribbons & Mushrooms
However many years later, I still love my $4.99 wok from IKEA. I love wok cooking, the speed, the one pan and everything coming together in the end with a little slurry. Carrots are so cheap but can really be a star when cooked to a nice semi firm bite, the natural sweetness melds with the salty soy and heat from the pepper flakes. Shaving them as ribbons with a peeler ensures they're all the same thickness. Also they pair nicely with chicory and mushrooms for a mellow meal.Sometimes I skip the rice even though whole grains are a good thing. In the end, I think you just end up eating twice as much meat and vegetables but I do feel better afterwards when I skip the carbs from time to time.
