Potato Medallions
If you don't want to fuss, potato medallions can be a real fun but tasty quickie. Slice to about a 1/4 inch lengthwise. Season well, but like over-season because they lose some of the zip in the process and roll around in a bit of oil. Put on a baking sheet at 375 for about 20 minutes until they're golden brown and slightly crisp, turn them once and leave another 5 minutes. If you love Frank's hot sauce, this is the time to use it because of the vinegar and heat. With salt, a winning combination. Who needs ketchup?
