Now Get to Work B*%tch!

I have made real chicken cacciatore where you painstakingly prepare all the elements separately and add wine and vinegar and afterwards you get this amazing rich dish that you can't believe you made yourself.  But this night it was about getting off of work and eating something really good with the least amount of effort possible.
I arranged raw onions and celery and carrots on the bottom of a large pot, on top I put seasoned skinless chicken thighs (and didn't bother to pan brown them first), thyme, oregano, a can of fire roasted tomatoes, lots of garlic, a little balsamic vinegar and worcestershire sauce.  I put a tight lid on that sucker and put in the oven for a bit over an hour and it was actually pretty fall off the bone fabulous. 
I served it with leftover bean soup.  Not too shabby for a work night meal.  My hours have been cut and for reasons not sufficient enough for me they are scheduling us two 4 hour days in the week.  The loss is enough to feel but in some ways it's a blessing.  Dead of winter. Cold dark icy nights.  Retail. Life-blood sucking customers.  Four hours is just about 4 hours longer than you want to be in that place.  Screw it.  I'll eat more beans.  They're nice and cheap.  I'm not looking for a Lamborghini.
