Welcome to My Nightmare, I Think You're Gonna Like It

Skillet Chicken and Rice w/ Sweet Potato
Previously on No One Gives a Shit (but me), I had baked extra sweet potatoes to include in upcoming one-armed meals.  Today, I made a traditional Mexican Chicken (here's a nice recipe) and Rice and at the tail end of cooking, I topped it with Kale and chunks of baked sweet potato to steam for 10 minutes.
I like adding vegetables to make a cohesive dish instead of individual sides.  This bred out of laziness I suppose but conventional dinners have always spooked me a tiny bit.  Seeing naked peas next to white potatoes on the plate for example, all lonely and tasteless.  It's a fear of normality, perhaps.  Is that a real condition?
This was delicious and feeds an army, so be sure to portion out some for the freezer.  These frozen meals are great for rainy day options.

Feed My Frankenstein

A big steak and asparagus and spinach with mushrooms

Clearly feeling the need for some protein and iron.  Honk if you're part wolf, part vampire.

We Sweat and Laugh and Scream Here

A matinee trip to Alamo Drafthouse Citypoint in Brooklyn
Movies are certainly approved escapes from worry, sadness, boredom, and assorted weaknesses.  But what happens when nothing you care to see is playing, especially early in the day?  You psych yourself into a movie that might surprise you, like Nope.  I'm neither a Jordan Peele fan or foe, like M. Night Shyamalan, I agree they've helped to progress the horror genre further but they've failed to take me to a happy ending so to speak in their story conclusions.  There is enough creativity in their ideas and characters, that I feel they could elevate further.  But also I realize it must be so difficult to produce quality fear in this era.  There is too much real terror happening every day in the world so we need scary to be entertaining with just enough 'real life' elements thrown in but not enough to remind us of our impending doom.  We want to be taken to another space where fantasy still exists however, we're more sophisticated now, so the monsters need to grow with us. This isn't a movie review, I'll leave that to the experts but spoiler alert, I loved the beginning, the middle and the characters.

Angry Omnivore Flatbread - 860 cal 16 Pepperoni, roasted peppers, Kalamata olives, fresh tomatoes, red onions, mushrooms, Tillamook mozzarella, parmesan, home-made marinara, and Loaded Fries - 1100 cal 13.5 Made-to-order fries, Hatch green chile queso, Tillamook cheddar, cotija, bacon, cilantro, scallions, sriracha sour cream were consumed and enjoyed wholeheartedly.  Again, the person that came up with making pizza's angry by adding pickled jalapenos, crushed red pepper and fresh basil at this popular theater is a genius.  Mentally it works, builds excitement with a supersizing of flavors and it delivers, even more importantly.
I love the escapism of these dark theater hallways and how walking through your paid for doorway is an entry to another world entirely if only for two hours.

Feels LIke I'm Livin' in the Middle of Doubt

About a million years ago my sister wrote and told me she was grilling a chicken that sits on a can of rootbeer.  I thought it was the coolest thing ever and then you started seeing it in magazines.  If you fill the can halfway with something flavorful and aromatic, then stick herbs in the opening of the can, you can then basically, well you sort of, the thing is, you take that bird and you set him like he's just gonna sit and then you push that can up into his little hole until everything sort of just settles and he's lookin' rested.

It's a little weird.  It's never good to get attached to your dinner but I sort of formed me a little bond with him and felt I could confide in him after I sat and studied him a spell.  He was a roaster and on sale to boot.  I shouldn't eat meat and sometimes feel terrible about it.  I decided I'd celebrate him by making a nice little bed of soft quinoa and a beautiful cucumber, tomato and strawberry salad.

He was super juicy and if nothing else, I was very grateful that he came into my life and roasted up so nicely.  There is no way to describe meat in a way that doesn't sound horrible when you know you have vegetarian friends.  I have mixed feelings.  A mix of denial and hunger. I gave up alcohol and drugs, I gave up what I sometimes feel was simply a lot of fun.  Sure, there is all kinds of fun and as my sister reminded me last week, we were all bad ugly drunks in this family.  Not the lively chipper party girls we may envision.  But still, you only get one life and the only thing worse than being a mess, is being a bore.   My evolution is very slow going.  I feel I need meat right now and if it's a horrible thing then I'm sure I'll pay for it soon enough as I seem to do for anything I enjoy too much.  I don't usually think this but sometimes it really sucks trying to live the straight healthy life.  I can relate to the plight of this little bird.

Well We Got No Class

Brooklyn take out from Fort Greene's National Thai. So good and affordable, always a lifesaver. They forgot our appetizer but showed up within five minutes with an extree large order of fried calamari. I have to mention that P got the Moo Prik Khing entree. ....snicker, snicker. Fitting. That's Catholic school boy humor of which somehow I really get and have a lot of.
