My Colors My Honor, My Colors My All

The best summer food is bright and colorful!
With all the negativity in our world these days, one huge positive is that I can get amazing (but apparently Salmonella laced) produce at my corner market and I do believe in making plates pretty with bright vibrant colors.  The combination of seeing, tasting and smelling fresh things, especially in the summer can rejuvenate the mind and spirit.

I may enter my next phase of learning because I suddenly feel the pull to create sauces. And the food universe responded by coincidentally adding many new hot sauce ideas to my YouTube feed.  The main inspiration was born from my friend sending me a pic of her Creamy Cilantro Lime Dressing.  I made it for a taco drizzle, then realized it would be a great alternative to a tomato based hot sauce for nachos, among many other things.  And it was!  Super fresh and cool for the summer!  Shredded pork under the broiler gets crispy like Carnitas with added jalapenos, Pepper Jack cheese and a scattering of black beans.  I love to dress your own nachos, so on the side I had fresh cut tomatoes, red onions, avocado, corn from the cob and more cilantro with the sauce.

Breakfast Diner Style Omelet
Did you ever notice at some diners what they call an omelet is some hybrid of a good egg scramble and a squashed grilled egg pancake?  I do tend to like them because they have that flat griddle flavor.  I recreated my version this morning by round-squooshing the egg mixture into the corner of the pan, then right before I turned it out onto the plate, I turned it on medium high to form a slight crust.  So good!
