This was one of those days. I was rushed getting into work, almost arriving late. I never got a break, which makes me cranky. I'm a huge advocate for taking time outs. You need them for your own sanity. Breaks are reminders that we are who we think we are. I was hungry because since I didn't break, that means I didn't eat. So that made me hurry back home on my bike in order to make a fast dinner. By the time I did get home I realized I didn't have a solid meal plan. Pots and pans were flying. That's why I'm calling this, Desperate Dinner.
Leftover roasted asparagus, leftover frozen peas mixed with steamed edamame. Leftover turkey burgers perked up with avocado and turkey bacon. I had an idea to do something with apple slices. It looked funny, like my cat chewed it a few seconds and then spit it out but tasted like apple pie with the crust! I just cut thin slices of green apple and sauteed them with a little olive oil. I thought you needed sugars and cinnamon, a bunch of stuff to get this flavor. Apparently not. I ate quickly, washed the dishes, cleaned my mayhem, scooped the cat's litter, then took a shower and before I knew it the day was over. I looked at the clock and it was late. So damned if I wasn't rushed to bed too.
