I am not good with sandwiches. Something that should be so simple often trips me up. They're precious and I get nervous. This was a quickie, a toasted ham and cheddar which would have been enough but I had the idea to add my Mexican coleslaw as the relish and even though the pic isn't great, this sandwich was a dreamy little surprise! The crunch of the pickled onions and cabbage and the bite of the jalapeno, the herby, floral cilantro cut through the richness of the ham and cheese. Wow!
