Cool for the Summer


Grill Pan Tacos
The savior this year was this grill pan I bought for my oven but barely fits.  It's perfect for grilling stove top, especially in heat waves.  Foodies find a way to get what they crave and last year I discovered you can make multiple tacos at once in the oven but this works just as well and it's cooler, for the summer months  They get nice and crisp and you can dip them in the hot sauce like a grilled cheese.

Pig is Nude, Unashamed

Pork Chop with Watermelon Feta Salad
Basil, lime zest, and balsamic vinegar tossed with feta, olives, and a little olive oil, makes for a refreshing enough salad that allows you to believe it cancels out the vat of creamy mashed potatoes you are eating with your giant pork chop.
For lunch, a quickie chicken corn soup with spinach
Freezing chicken stock saves the day for when you want that deep flavor but you don't want to spend all day making a soup.  Stock, corn, chicken simmered first before frozen spinach was tossed in at the end.  Fortify your flavor with a dab of Better than Bouillon, herbs and a squeeze of lemon.
