Simplest of preps. Artichoke Hearts in their own vinaigrette, roasted tomatoes and lemon juice atop the red rice. Seasoned baked chicken thighs. The tanginess and acidity works well to bring life into the juicy white meat. And the red rice has that bite and hearty foundation.

So Tell Me Why Should It Be True, That I Get a Kick Out of You
Baked Chicken Breast with steamed Bok Choy and Asparagus.
I was never fond of white meat chicken. Seemed like a sad, tasteless eating experience if you asked me.
What you can't see here is the difference between an over-baked dry breast of the past and a succulent moist just right piece of poultry. My future. Bonus was getting a well seasoned crispy layer on top as well. If I learned anything this year it was how to do this. And honestly, it's the small things that make me happy.Chicken is just chicken unless you make it just right. Then it becomes the only meat you'll ever want to eat.
