Doesn't Seem to be a Shadow in the City

Shrimp Tostadas
Simple grilled shrimp on guacamole schmeered baked tortillas with cool,crispy toppings is a very summer satisfying meal.   
I'm not sure what was hotter, the spring or the summer this year, but I know that many times, even standing in the kitchen was more than I could bear, let alone turning on burners.  Heat will be a major factor in the coming years, so beginning a list of easily prepared summertime meals is great idea.  You can buy tortilla shells but you can also get them crisp stovetop with a painting of oil on both sides and a hot grill pan.  Use that same pan to make your shrimp and everything else is a chop, skip away.  Lunch idea:  These torts will keep in the fridge in a plastic container and will keep their crispness, so taking them for a work lunch is easy, just mix up your toppings in one container and put 1 or 2 torts aside to top on site.  In a way, this is a much more effective way to assemble, as you get the best in every bite and it keep elements bound together. (not shown)  I will definitely feature this method next time.
