Spicy Shrimp Tostadas
I had some Basmati rice and figured it could be fine in my mom's Mexican Rice recipe and it so was! It's like rice with air in it, very light and fluffy. A perfect side for my Spicy Shrimp Tostadas. A nice layer of guacamole on the bottom with crispy purple cabbage for crunch. They were as delightful to look at as to eat.
