Zucchini and carrot ribbons with chicken meatballs, black olives and marinara sauce. If I plated this more carefully you would see what a beautiful dish she is. This won't win any awards for creativity but I will say lightly sauteed, thin sliced vegetable ribbons are just so... elegant! Like potato chips dipped in champagne!
