Yesterday I made confetti corn and today, I took those leftovers and made Crazy Corn! This should be a necessary side dish for all clowns. It's funny food! And its a winner! Biting into it and looking at it makes me giggle. Okay, so this time since it was already cold in the fridge, I added small diced carrots, cucumber, red onion, tomato, avocado and more lime juice to my confetti corn that already had jalapeno, red peppers and onions. At the end a squirt of EVOO, s&p. Crazy good! Every bite is full of flavorful, colorful fun! Cool, goofy food, right up my alley. Add a pinch of fresh herbs for a springtime punch!
And this time I took my marinated chicken chunks and put them in a preheated 375 degree oven for 20 minutes. Much better than last nights fail, much juicier. An excellent recovery!
