Getting back deeper into the cooking waters, I attempted homemade meatballs baked, then topped with a tomato sauce, Zucchini ribbons to act as a lasagna noodle. Layered that, then topped with mozzarella and Parmesan. This was delicious. But I know if this were to be a real recipe, things would need to be reworked. For one, I would reduce the sauce and maybe add ricotta so the layers of zucchini have something to really bind to while baking. I didn't let it rest so that I could see if the layers worked. I was so hungry that I had to dive in. Just a good excuse to make it again. Good problems to have.
