Someday When I'm Lonely, Wishing You Weren't So Far Away

Midwestern Mexican Stuffed Peppers 








Named so because inside is the taco-y meat, pepper, tomato, onion, cilantro, garlic mixture that my mom made for her homemade stuffed peppers that were so amazing.  Then I added a little sharp cheddar on top, combined a tomato soup over crispy brown rice and some bread crumbs on top to give it that homey 'something good is coming out of the oven' feel that I learned back in the Fort.
