Another salad for Chicken Salad Week. Mind you, I wasn't actually going for variety of chicken salads, but now that I say it, that's a great idea for next time. I was more looking to expand upon the Mexican chicken salad I ordered from El Toro Taqueria. This was better than expected with the pinto beans and hot chicken over cold salad. Lots of fresh cilantro mixed with chopped iceberg lettuce.

Chicken Salad Week
The next night of chicken salad extravaganza week I got a little fancier by roasting my seasoned chick peas until they tasted like a crunchy nut.
I tossed with garlic infused olive oil, arugula, and lemon juice.
This was good. More upscale tasting. A nice crisp pita chip would have gone well. In my salad contest week, I would award this one as honorable mention. Very unique, a pleasant surprise.
